119g of protein - 1,700cal for this CRACKIN TACO dinner. I cook my family slightly different stuff than me, as I have a food problem, they do not. 

My daughter: 2 quesadillas + broccoli & Coleslaw. She eats pretty healthy but she is 7 and loves candy. So a taco with veggies does not “spark joy”, remember that meme? 

My Son: Beyond beef (avocado oil version), diced broccolini, cashew cheeze + broccolini & coleslaw. He LOVES the coleslaw I make (purple cabbage, vegan mayo, apple cider vinegar, lemon juice, sea salt), so he ate a ton of that + half a quesadilla. 

Kristin: Similar to me but with the beyond and with the tastier tortillas and a quesadilla. 

Me: low calorie tortillas and the FavaBean tofu cooked and seasoned like chicken strips, cashew cheese, onions & peppers, avocado, chipotle bitchin sauce, broccolini with a little of beyond meat, and the coleslaw.

As far as vegan tacos go, these are up there as some of the best I can make.
